Potato Salad

My First Potato Salad Recipe

  •  8 large red potatos or a bag of red potatos 
  • 6 hard boiled eggs, chopped
  • 1 lb. bacon
  • 1 large white onion, chopped (Vidalia optional)
  • 2 c. mayonnaise
  • 1 c. sour cream
  • 2 tsps. dried dill
  • 3 tbsp. Milk
  • 1 ½ tsp.salt
  • ½ tsp. black pepper
  • 1 tsp. garlic powder
  • 2 tsp. Sugar
  • 2 Tbsp. yellow or Dijon mustard (optional)
  • Some  chives and paprika for garnish

 

1. Wash and boil potatoes until tender. Let cool. Boil potatoes until tender (but not mushy!), rinse, let cool in the refrigerator for an hour. Meanwhile, place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 20 to 22 minutes (10 to 12 minutes for a different consistency). Remove from hot water, and place in a bowl of cold water to cool.  The dice or mash depending on personal prefferance

2. Chop and cook bacon and onion together, until bacon is crispy. Drain grease into a bowl and reserve.  The crispier the bacon the better

3. In a small bowl mix mayonnaise, sour cream, bacon drippings and milk. In a large bowl, combine potato, eggs, and the onion-bacon mixture. Add mayo mixture to potato mixture and toss. Add all other ingredients to large bowl and toss well to combine. Cover with plastic wrap and refrigerate for 24 hours.  Garnish with chopped chives and paprika and lay on a bed of tlttuce.
